|MINT POTATO
INGREDIENTS:
Potato 250 gms
Tomato 1 small
Cumin seeds 1/2 tsp
Pepper powder 3/4 tsp
Mint leaves 10
Salt
PREPARATION METHOD:
Pressure cook potato and keep it aside. Let it cool.
Cut it in to desired shapes.
Add two tbsp oil to a hot pan.
Add cumin seeds, pepper powder, turmeric powder.
Add cut mint leaves and cut tomato and fry till tomato is soft.
Add salt and mix well.
Add potato and mix gently.
Fry in low to medium flame till the oil is absorbed.
Serve hot with white rice, chapathi or poori.
