BITTER GOURD SESAME SEEDS PACHADI
|INGREDIENTS:
Sesame seeds 2 tbsp
Finely cut bitter gourd pieces 1/2 cup
Red chillies 2 Medium size
Fenu greek 3/4 tsp
Tamarind paste 2 tbsp
Jaggery 1 tbsp (Or as per requirement)
PREPARATION METHOD:
Add the bitter gourd pieces to a bowl of salted water.
After 1/2 an hour drain the water and squeeze the gourd well.
Add a tsp oil to a hot pan.
Add sesame seeds, red chillies and fenu greek and roast it.
When it become cool add it to a mixie jar and dry grind it.
Add 1 tbsp oil to a hot pan and add bitter gourd pieces and fry in high heat.
After a minute reduce the heat to minimum and add sufficient water.
Close the pan with a lid and cook till bitter gourd becomes soft.
Add tamarind paste, salt and jaggery and mix well.
Add little more water and when it boils reduce the heat and add the ground powder.
Mix well without lumps and switch off the heat.
Serve hot with hot white rice and a spoon of ghee or gingelly oil.
PS: Roasted things can be ground with little water also.
