Tomato Vermicelli

INGREDIENTS:

1. Roasted vermicelli 2oo gms 2. Tomatoes medium size 3 3. Green chillies 3 or 4 4. Carrot 1 5. Curry leaves and coriander leaves A few 6. Salt 7. Mustard seeds 1 tsp 8. Urad dhal 1 tsp 9. Bengal gram 2 tsp PREPARATION METHOD: a. Grind tomatoes, green chillies, curry leaves and coriander leaves. b. Add 3 tbsp oil to a hot pan and add mustard seeds. c. Add urad dhal and bengal gram and fry till golden. d. Add finely cut carrots and fry for a minute. e. Add the ground paste and water along with salt. f. Water used should be 2 and 1/2 cups( including for grinding). g. When the water is boiling add vermicelli. h. Turn the vermicelli gently and close it with a lid. i. Let it cook in medium to low flame. j. Turn the vermicelli gently one or two times. k. When vermicelli is soft switch off the stove. l. Let it be on the stove for few more minutes with closed lid. m. Serve hot with coconut chutney.
