Vegetable Aval Upma
Ingredients:
Aval 1 cup
Carrot small 1
Beans 2
Small onions 10 big
Long green chillies 2 or 3
Grated coconut 1/4 cup
Curry leaves and coriander leaves A few
Salt
Tamarind paste 2 tbsp
Jaggery 1 tbsp
Bengal gram 2 tbsp.
Preparation Method:
Take a bowl and add tamarind paste, salt and jaggery to it.
Add one cup of water and boil it.
Add the aval to the boiling water and switch off the heat.
Close the bowl with a lid and keep it aside for 2 hours.
Soak the bengal gram in water for 1 hour.
Dry grind green chillies,curry leaves and coriander leaves.
Cut onions length wise.
Cut carrot and beans into tiny pieces.
Heat a tawa and add 3 to 4 tbsp oil.
Add 1 tsp mustard seeds, 2 tsp urad dhal and the soaked bengal gram.
Add 1/4 tsp asafoetida, beans and carrot and fry till soft.
Add onions and fry till it becomes soft.
Now add the ground paste and fry for 2 minutes.
Add salt only for the vegetables.
Now add aval and mix well and cook in a low heat.
Add grated coconut and mix well.
Serve hot with vadu mangai vurugai and cut onions.
