AAPPAM WITH COCONUT MILK

INGREDIENTS:

1. Raw rice 1 cup 2. Boiled rice 1 cup 3. Urad dhal 1 tbsp 4. Fenu greek 1 tsp 5. Coconut grated 1 big 6. Jaggery or sugar As per requirement 7 .Cooking soda 1/2 tsp 8. Salt PREPARATION METHOD Soak both rice, urad dhal and fenu greek in water for an hour. Grind smoothly with little water. The batter should be thicker than idly batter. Mix salt and keep it aside for ten hours. After ten hours extract coconut milk with 2 cups of water. Keep that first extract aside. Now again extract coconut milk with 1 and 1/2 cup of water. Add the second extract to the batter as per requirement. The batter should be little thinner than the dosa batter. Add cooking soda to the batter and mix well. Add jaggery or sugar to the first extract and mix well. Make aappam in the appam pan. Aappam can be made in dosa pan too. Close the pan with lid and cook for two minutes. The flame should be medium and no need of flipping. Serve hot with coconut milk, coconut chutney and onion chutney. No need of cooking coconut milk. If aappam is made in aappam pan it will be looking like a bowl.
