Four dhal Idly (Dhavanam Idly)

Tuar dhal 1/4 cup Urad dhal 1/4 cup Bengal gram 1/4 cup Peeled broken green gram 1/4 cup Raw rice 1/4 cup Green chillies 5 to 6 Grated coconut 1/2 cup Fresh curd As per requirement Coriander leaves 1/4 cup Amaranth leaves (Siru keerai) 1/2 cup Salt Preparation Method: Soak raw rice in water for an hour and drain it. Let it dry in a dry cloth. Now break it as small grains in mixie. Keep it aside. Soak four types of dhal in water for an hour. Grind all dhal coarsely with little water. Mix salt and broken raw rice and keep it aside for 8 hours. Mix required quantity of fresh curds for making idly. Add 1/2 cup finely cut siru keerai (Amaranth) leaves. Dry grind green chillies and coriander leaves and add to the batter. Add 2 tbsp soaked bengal gram and grated coconut. Add 2 tbsp oil and 1 tbsp ghee to a hot pan. Add 1 tsp mustard seeds and add to the batter and mix well. Make idlis and serve hot with coconut chutney. Idlis should be cooked in medium flame for 20 minutes. This idly will take a little longer time to get cooked. This is a delicious traditional south indian breakfast. And rich in protein.
