Green leaves thuvaiyal
Ingredients:
Pudhina leaves (Mint leaves) 1/4 cup
Tender curry leaves 1/4 cup
Coriander leaves 1/4 cup
Grated coconut 3 tbsp
Bengal gram 2 tbsp
Urad dhal 2 tbsp
Red chillies 4
Tamarind paste 1 tbsp
Salt
Jaggery 1 tsp
Mustard seeds 1 tsp
Preparation Method:
Add 2 tsp oil in a hot pan and add mustard seeds.
Add asafoetida and add this to a bowl.
Add 2 tsp oil to the pan and add bengal gram and fry.
Now add urad dhal and red chillies.
Fry till bengal gram turns golden.
Now transfer to the mixie.
Heat the pan again and add coconut and fry for a minute.
Now add all leaves and switch off the stove.
Fry the leaves for a minute till it shrinks.
Let it cool. Now grind all the things together coarsely.
Add little water, tamarind paste, salt and jaggery and grind.
Mix it with the seasoning and serve with hot rice and ghee.
It suits all varieties of idly and dosa.
