Ridge gourd Thuvaiyal

INGREDIENTS:

1. Ridge gourd (one feet long) 1 2. Urad dhal 2 tsp 3. Bengal gram 1 tsp 4. Red chillies 2 5. Tamarind paste 1 tsp 6. Salt 7. Mustard seeds 1/2 tsp 8. Asafoetida A pinch PREPARATION METHOD: a. Cut ridge gourd into small pieces with skin. b. Roast urad dhal, bengal gram and chillies with one tsp oil. c. Transfer it into the mixie. d. Now fry the ridge gourd pieces for two minutes. e. Let it cool. f. Grind the pulses and chillies coarsely. g. Add the ridge gourd pieces, tamarind and salt. h. Grind coarsely without water. i. Season it with mustard seeds and asafoetida. Serve with hot white rice and ghee. Ridge gourd should be checked for taste before using. Bitter ridge gourds should not be used.
