LEMON RICE
|INGREDIENTS:
Rice 1 cup
Lemon 2 (Medium size)
Green chillies 4 to 5
Crushed groundnuts (roasted) 1/4 cup
Curry leaves and coriander leaves A few
Mustard seeds 1 tsp
Urad dhal 2 tsp
Bengal gram 1 tbsp
Turmeric powder 1/2 tsp
Asafoetida 1/4 tsp
Salt
PREPARATION METHOD:
Pressure cook rice with less water.
(If you use 4 cups normally, use 3 cups of water.)
Spread the cooked rice in a broad plate and let it cool.
Dry grind curry leaves, coriander leaves and green chillies.
Add 3 tbsp oil to a hot pan and add mustard seeds.
Add urad dhal, bengal gram and fry till bengal gram turns golden.
Reduce the heat to minimum and add asafoetida, turmeric powder and ground paste.
Switch off the heat and add this to the rice.
Add sufficient salt and crushed groundnuts powder.
Mix gently and add 3/4th quantity lemon juice to the rice.
Mix gently and check for taste and add more lemon juice if required.
Serve it with pappad.
