Thinai Curd Rice INGREDIENTS:

1. Thinai rice 1/4 cup 2. Curd As per requirement 3. Green chillies 3 4. Chopped ginger 1 tsp 5. Dry grapes 1 tbsp 6. Broken cashews 1 tbsp (optional) 7. Curry leaves and coriander leaves A few 8. Mustard seeds 1 tsp 9. Urad dhal 1 tsp 10. Bengal gram 1 tbsp 11. Asafoetida 1/4 tsp 12. Salt PREPARATION METHOD: a. Pressure cook thinai with 3/4 cup water and let it cool. b. Add 2 tbsp oil to a hot pan and add mustard seeds. c. Add urad dhal, bengal gram, cut green chillies and asafoetida. d. Add ginger, curry leaves and add it to the thinai rice. e. Fry cashews and dry grapes separately and add it to thinai rice. f. Add fresh thick curds, cut coriander leaves and salt and mix well. Serve chilled.
