Brinjal sambar
INGREDIENTS:
1. Small brinjal 1/4 kg (250 grams)
2. Big onion 1
3. Tomato (Medium size) 2
4. Tuar dhal 2 tbsp
5. Tamarind paste 2 tbsp
6. Jaggery 2 tsp (Optional)
7. Curry leaves A few
8. Salt
9. Sambar powder 1 and 1/2 tsp
10. Turmeric powder 1/4 tsp
11. Asafoetida 1/4 tsp
12. Mustard seeds 1/2 tsp
PREPARATION METHOD:
a. Pressure cook tuar dhal with turmeric powder and 1/2 tsp oil.
b. Cut onion and tomatoes length wise.
c. Add 3 tbsp oil in a hot pan and add mustard seeds.
d. Add asafoetida, curry leaves and onions.
e. Fry the onions in high flame till it becomes soft.
f. Add tomatoes and fry in high flame for 2 minutes.
g. Lower the flame and close it with a lid.
h. Let it cook for few minutes and then open the lid.
i. Now cut the brinjal length wise and add immediately to the pan.
j. Mix well and fry in a high flame for 3 minutes.
k. Now add tamarind paste, salt, jaggery and sufficient water.
l. Close the pan with a lid and cook it in medium flame.
m. Turn the brinjal gently in between.
n. When the brinjal becomes soft remove the lid.
o. Smash the cooked tuar dhal and add it to the sambar.
p. Add the sambar powder and mix well.
Serve hot with white rice.
