Ladies Finger Tamarind kulambu
INGREDIENTS:
1. Ladies finger 15
2. Tamarind paste 1 tbsp (or a little more)
3. Mustard seeds 1 tsp
4. Cumin seeds 1 and 1/2 tsp
5. Small onions 10
6. Red chillies 2
7. Roasted gram 2 tsp
8. Curry leaves A few
9. Grated coconut 1 tbsp
10. Turmeric powder 1/2 tsp
11. Asafoetida 1/4 tsp
12. Jaggery 1 tsp
13. Salt
PREPARATION METHOD:
a. Cut ladies finger in to 1 inch pieces.
b. Cut small onions length wise.
c. Grind coconut, cumin seeds, red chillies and roasted gram coarsely.
d. Add 3/4 tsp mustard seeds also for grinding.
e. Add 2 tbsp oil to a hot pan and add 1/4 tsp mustard seeds.
f. Add asafoetida and cut onions and fry for a minute in high heat.
g. Now add cut ladies finger and fry in high heat for few minutes.
h. Now reduce the heat to low and close the pan with a lid.
i. Cook till ladies finger is soft.
j. Remove the lid and add ground paste and tamarind.
k. Mix well and add sufficient water, salt, curry leaves and jaggery.
l. When it boils switch off the heat.
Serve hot with hot white rice.
