Aviyal
Ingredients: Carrot,beans,potato, chow-chow, peas, drumstick, raw banana.
White pumpkin and yam can also be added.
Grated coconut 1 cup
Green chillies 10 to 12
Cashews 5 to 6
Soaked raw rice 1 and 1/2 tsp
Salt
Curry leaves A few
Coconut oil 2 tbsp
Asafoetida 1/4 tsp
Banana leaf
Preparation Method:
Cut all vegetables in to 1 inch length and pressure cook with little water.
Grind coconut, cashews, chillies, soaked raw rice and asafoetida.
Heat a tawa, add 1 tbsp coconut oil, ground paste and cooked vegetables.
Mix it and let it boil in a medium heat.
Now lower the heat and add salt and whipped curds and switch off the stove.
Heat 1 tbsp ofcoconut oil in a pan and add mustard seeds and curry leaves.
Add it to the avial and cover it with a banana leaf and close it with a lid.
Serve with white rice.
