INGREDIENTS:
Wheat flour 1 cup
Cauliflower 1 small
Big onion 1
Long green chillies 2 (Or as per requirement)
Coariander leaves 1/2 cup
Salt
Cooking oil 2 tsp
Thick curd 1 cup
Cumin seeds 2 tsp
PREPARATION METHOD:
Add wheat flour, oil and salt to a bowl and mix well.
Add sufficient water and make a dough and keep it aside for half an hour.
Take a bowl of water and add 2 tsp of salt to it.
Immerse the cauliflower in the salted water for 1/2 an hour.
Take the flower out and wash it well.
Wrap the flower with a clean cotton cloth.
Now grate the flower. Add 2 tsp of oil to a hot pan and add the grated flower.
Fry it well in high heat till the moisture is absorbed.
Switch off the heat and let it cool.
Slit the green chillies in to two and remove the seeds.
Cut the chillies in to very tiny pieces.
Cut the onion in to very tiny pieces.
Mince the coriander leaves .
Add the chillies, coriander leaves and onion to the flower.
Add sufficient salt and mix it well.
Dry roast cumin seeds in a pan, till it splutters.
Powder it in the mixie and add it to the thick curd along with salt.
Take a lemon sized dough and roll it into a thick chapathi.
Keep 2 tsp of flower mixture in the centre and close it.
Make it as a ball and roll it gently in to thick parathas.
Add the paratha to a hot pan and cook it in medium heat.
Sprinkle oil and cook it for a minute and flip gently.
Sprinkle oil on the other side and cook till golden brown.
Serve hot with raitha or any mango pickle.
PS: This paratha needs a little more oil to cook, than chapathis.
No need of cooking onion, chillies and coriander leaves.
Mix it directly with the cooked cauliflower.
