URAD DHAL MURUKKU
|URAD DHAL MURUKKU:
INGREDIENTS:
Rice flour 1 cup
Water 1 and 1/2 cup or (As per requirement)
Urad dhal 1/5 cup
Butter 1 tbsp
Salt
Oil to fry
PREPARATION METHOD:
Sieve the rice flour.
Heat water along with salt.
When the water is boiling lower the heat.
Add the rice flour evenly in one hand and keep stirring in the other hand.
Switch off the stove and mix well for a minute.
Close the pan with a lid and keep it aside for 1/2 an hour.
Dry roast urad dhal in medium heat till golden.
Switch off the stove and let it cool.
Powder the urad dhal well and sieve the flour.
Add the rice flour dough in a plate and kneed well without lumps.
Add the urad dhal flour and butter and kneed well.
Make the dough smooth enough to squeeze in the murukku maker.
Add oil in a broad pan and heat it in medium flame.
If the oil is hot enough, squeeze the dough in a circle and fry it in high heat.
Fry for few minutes till the sizzling sound decreases.
Turn the murukku and cook for few minutes till the sound goes off.
Remove from oil and strain well and put it in a bowl with tissue paper.
Store in an air tight container when the murukku comes to room temperature.
PS: The water requirement varies according to the type of rice.
If the dough is hard add little hot water.
In the broad pan oil level should be half of the pan.
