AVARAIKKAI CURRY (INDIAN BROAD BEANS)
|AVARAIKKAI CURRY:
INGREDIENTS:
Avaraikkai 200 gms
Big onion 1
Tomato 1
Green chillies 2 to 3
Grated coconut 2 tbsp
Curry leaves A few
Salt
Mustard seeds 1/2 tsp
Urad dhal 1 tsp
PREPARATION METHOD:
Wash the avaraikkai well, cut into small pieces and pressure cook.
Add 3 tsp of oil to a hot pan and add mustard seeds.
Add urad dhal and stir till golden.
Add cut green chillies, curry leaves and then cut onions.
Fry till onion becomes soft then add cut tomato.
Fry in a high heat for 2 minutes and reduce the heat to minimum.
Close the pan with a lid and cook for two minutes.
Add cooked beans and mix well.
Add salt and coconut and mix well and remove from heat.
Serve hot with white rice.
