RICE FLOUR ROTI
Ingredients:
Rice flour 1 cup
Carrot(medium size) 1
Green chillies 2
Onion 1
Mustard seeds 1/2 tsp
Cooking oil 3 tsp
Salt
PREPARATION METHOD:
Chop onions finely and grate the carrot.
Grind chillies with little water.
Add oil to a hot pan and add mustard seeds.
Add onion and fry till it becomes soft.
Add carrot and fry for two minutes.
Now add ground chillies and salt.
Add 1 and 1/4 cup water to the pan.
When it is boiling add the rice flour slowly in minimum heat.
While adding rice flour keep stirring continuously.
When the water is absorbed switch off the stove.
Close the pan with a lid and keep it aside for 30 minutes.
After 30 minutes check the dough for lumps and make lemon sized balls.
Flatten the balls into rotis of medium thickness.
Place this roti on a hot dosa pan and cook in medium heat.
Sprinkle little oil and flip the roti and cook for a minute.
Serve hot with onion chutney.
