Lemon Pickle
Ingredients:
Lemons 10 Big
Crystal salt 1/2 cup
Chilly powder 1/4 cup
Fenu greek 1 tsp
Cumin seeds 1 tsp
Asafoetida 3/4 tsp
Curry leaves A few
Preparation Method:
Wash well the lemons.
Arrange the lemons in a big bowl in a circle.
Pour water for 1/2 inch in the bowl.
Pressure cook for 2 whistles.
Let the bowl cool completely.
Lemons and water should be cool.
Cut the lemons into pieces with a dry knife.
Add the salt and chilly powder and mix well.
Dry roast fenugreek and cumin seeds and powder it.
Add the powder to the pickle and mix it.
Heat 5 tbsp oil and add 1 tsp mustard seeds.
Add 3/4 tsp asafoetida and curry leaves.
Add to the pickle and mix well.
Never touch lemons with hands, always use dry spoons.
Taste the pickle and add salt and chilly powder as per taste.
Use dry bottles to store the pickle.
Refrigerate the pickle immediately after every use.
