BITTER GOURD SPINACH KOOTU

Bitter gourd  250  grams

Spinach   1  bunch

Broken dehusked green gram  400  ml

Onion  1   big

Green chillies  4

Cumin seeds  2  tsp

Salt

PREPARATION METHOD:

Clean and remove the seeds of bitter gourd.

Cut bitter gourd in to small pieces and add it to a bowl of salted water.

After  1/2  an hour drain the water and squeeze the bitter gourd well and keep it aside.

Pressure cook gram with water.

Clean and cut the spinach leaves and keep it aside.

Add 1  tbsp oil to a hot pan and add cumin seeds.

When it splutters add cut onion and green chillies and fry till onion is soft.

Add bitter gourd and fry in high heat for a minute.

Add spinach leaves and fry in high heat.

Reduce the heat and add little water.

Close the pan with a lid and cook in low heat till gourd and spinach becomes soft.

Add cooked gram, water and salt and mix well.

When the kootu boils remove from heat.

Serve hot with hot white rice.
