BITTER GOURD AND LADIES FINGER TAMARIND KULAMBU

INGREDIENTS:

Bitter gourd  2  (Medium size)

Ladies finger  5  to  6

Small onions  15

Long green chillies  2

Tamarind paste  2 to 3  tbsp

Rasam powder  1  tsp

Turmeric powder  1/4  tsp

Salt

Jaggery  1 tbsp (Or as per requirement)

Rice flour  1  tsp

Mustard seeds  1/4  tsp

PREPARATION METHOD:

Cut bitter gourd in to 1 inch length thin pieces.

Remove the seeds and soak the pieces in a cup of water along with 1 tsp salt.

After 1/2 an hour remove the pieces and squeeze it well.

Cut ladies finger into 1 inch length pieces.

Cut onions length wise and chillies into small pieces.

Add 1  tbsp oil to a hot pan and add mustard seeds.

Add cut onion and cut chillies and fry in high heat.

When the onion becomes soft, add bitter gourd and fry in high heat for a minute.

Then add ladies fingure and fry in high heat for two minutes.

Reduce the heat to minimum and close the pan with a lid and cook for few minutes.

When the vegetables are soft add tamarind paste, turmeric powder and salt.

Add rasam powder, jaggery and 1/2  cup water and mix well.

When the kulambu is thick and starts boiling, switch off the heat.

If the kulambu is watery, add the rice flour to 1 tbsp water and mix well in a small cup.

Add it to the pan and cook in low heat.

When the kulambu becomes thick switch off the heat.

Serve hot, with hot white rice along with a spoon of gingelly oil.
