BITTER GOURD CURRY

INGREDIENTS:

Bitter gourd  125  grams

Thick tamarind extract  2 tbsp   (Or as per requirement)

Thin tamarind extract  1/4 cup

Rasam Powder  1  tsp

Jaggery  3 tsp

Salt

Turmeric powder  1/4  tsp

Curry leaves  A few

Mustard seeds  1/2 tsp

PREPARATION METHOD:

Slit the gourd into two and remove the seeds.

Cut the gourd into small pieces.

Add a cup of water to a bowl and add 1 tsp of salt to it.

Add the gourd to the bowl and let it  for 30 minutes.

Now drain the water and squeeze the gourd pieces a little.

Pressure cook the pieces along with turmeric powder and thin tamarind extract.

Drain the water from gourd and squeeze a little.

Add 3 tsp oil to a hot pan and add mustard seeds.

Add cooked gourd and fry for two minutes.

Add thick tamarind extract, salt, jaggery, rasam powder and curry leaves.

Mix well and cook in low flame till moisture is aborbed.

Switch off the stove and serve hot with white rice and ghee.

PS:This dish is  tasty and healthy too.

It kills the germs in the intestine.

Since it is a bitter vegetable, adding jaggery is necessary.
