BRINJAL RAW MANGO CURRY

INGREDIENTS:

Brinjal (with white and green colour skin(preferably)  250 gms

Sour raw mango  ( cut into 1/2 inch square pieces)  1/3  cup

Small onions  (Peel and cut  lengthwise)  1/2 cup

Garlic flakes  (Peel and cut lengthwise)  1/4 cup

Poppy seeds  1 tbsp

Coriander seeds  2 tsp

Cumin seeds  1  tsp

Fenu greek  1/2 tsp

Black pepper  1 tsp

Red chilly powder  1 tsp  (As per requirement)

Tamarind paste 2 tsp

Jaggery  1 tbsp

Salt

Turmeric powder  1/4 tsp

Asafoetida  1/4 tsp

PREPARATION METHOD:

Add 3 tbsp oil to a hot pan and add onion and garlic.

Fry in high heat for 2 minutes and then add brinjal (cut lengthwise).

Fry for two more minutes in high heat then add mango pieces.

Fry for a minute and reduce the heat to minimum .

Close the pan with a lid and allow it to cook.

After few minutes open the lid and turn the vegetables gently.

Add salt, tamarind paste, jaggery, turmeric powder and asafoetida.

Sprinkle  little water and mix gently and close the lid for few minutes.

When brinjal is cooked well remove the lid.

Dry grind poppy seeds, coriander seeds, cumin seeds, pepper and fenu greek.

Add this powder to the pan along with  red chilly powder.

Mix gently and cook for two more minutes in low heat.

Remove from heat and serve hot with hot white rice and gingelly oil.
