BRINJAL KULAMBU
Ingredients:
Small Brinjal 250 gms
Poppy seeds 1 tbsp
Grated coconut 4 tbsp
Green chillies  6 or 7
Salt
Lemon Juice 1/2 tbsp (as per requirement)

PREPARATION METHOD:
Grind 1 tbsp of coconut, poppy seeds and 5 green chillies smoothly.
Extract coconut milk (two times) with 3 tbsp of grated coconut.
Cut brinjal into length wise pieces.
Add one tsp of ghee and 2 tbsp of oil to a hot pan.
Add brinjal and 2 cut green chillies and fry in high heat.
Lower the heat and add ground paste with sufficient water and salt.
Close the pan with a lid and Cook it in low heat. 
After 2 to 3 minutes remove the lid and mix it gently.
Close the lid again and cook till the brinjal becomes soft.
Now add the coconut extract and when it starts boiling switch off the heat.
Now add the lemon juice and mix gently.
Serve hot with white rice and ghee.
