BITTER BERRY KULAMBU (SUNDAIKKAI)
|INGREDIENTS:
Fresh Sundaikkai 1/2 cup
Grated coconut 1 tbsp
Tomato 1 medium size
Onion 1
Garlic flakes 3 to 4
Tamarind paste 1 tbsp ( Or a little more)
Coriander seeds powder 1/2 tsp
Cumin seeds 1 tsp
Fenu greek 1/2 tsp
Curry leaves and coriander leaves A few
Jaggery 1 tsp
Chilly powder 1/2 tsp (Or as per requirement)
Turmeric powder 1/4 tsp
Asafoetida 1/4 tsp
Salt
PREPARATION METHOD:
Crush open berries and add it to a bowl of water.
Remove the seeds by washing twice.
Drain the water well and keep it aside.
Add 2 tbsp oil to a hot pan and add cumin seeds and fenu greek.
Add berries and fry in high heat for a minute.
Add turmeric powder and asafoetida.
Add cut onion, garlic, and curry leaves and fry in high heat for 2 minutes.
Lower the heat to medium and fry till onion becomes soft.
Add tamarind paste and sprinkle little water.
Close the pan with a lid and cook in low heat till berry becomes soft.
Grind coconut and tomato with little water.
When berries become soft add ground paste.
Add salt, coriander seeds powder, jaggery, chilly powder and very little water.
Mix well and cook in medium heat till the kulambu starts boiling.
Reduce the heat to minimum and add coriander leaves and cook for a minute.
Remove from heat and serve hot with white rice.
