MAIDA BONDA (ALL PURPOSE FLOUR)
INGREDIENTS:
1. Maida 1 cup
2. Rice flour 1/4 cup
3. Sour curds (as per requirement)
4. Ginger 1/4 inch
5. Green chillies 2 or 3
6. Salt
7. Cooking soda A pinch
8. Mustard seeds 1/2 tsp
9. Asafoetida A pinch
10. Curry leaves A few
11. Oil - for frying
PREPARATION METHOD:
a. Add maida, rice flour, salt and cooking soda to a bowl.
b. Add ginger chilly paste and curry leaves to the bowl.
c. Season it with mustard seeds and asafoetida.
d. Mix well and add sufficient sour curds to make a thick batter.
d. The batter should be thicker than dosa batter.
e. Heat oil in a pan (in medium heat).
f. When the oil is hot drop the batter little by little carefully.
g. Fry them in medium heat and when it turns golden remove from oil.
Serve hot. This is a good evening snack that too in rainy season.
